Where did gingerbread houses come from?

They are usually traced to Germany in the early 1800s, around the time the Brothers Grimm published Hansel and Gretel, in which a witch lives in a house made of bread and sweets. German bakers began selling decorated houses at Christmas.

How do I colour gingerbread so it looks baked?

Start with light brown or tan all over, then add a darker brown around the edges, where real biscuits bake crisper. Leave the icing lines white and use red, green and pink for sweets and buttons.
